Perfect Pot Roast

Stracotto (Pot Roast) with Porcini Mushrooms

I'm not a traditional meat and potatoes kind of girl but this was amazing!!!  There is minimal prep-work, just set it and go.  When reading reviews on this particular cut of meat and how long to cook it, people complained about it being tough.  It's not tough as long as you treat it right.  The porcini mushroom gravy is so delicious and packed full of flavor.  When cutting it, the meat fell apart and when eating it, it melts in your mouth.  Be sure to use a good red wine; one that you'll enjoy drinking the rest of too (I used Apothic red blend, my favorite dryer red).  Instead of mashed potatoes, I served it over egg noodles.  I also only used a 3 lb chuck roast since it's just the two of us and cooked it 2 hours while flipping it half way through.

My love for cooking started when I could barely reach the countertops. My mom would get out all of the baking supplies and let me create. Needless to say, my cooking techniques have become a bit more sophisticated. I believe that I can recreate anything I see in a restaraunt or cookbook.
