Spicy Orange Shrimp Rice Bowl

Spicy Orange Shrimp over Arborio Rice

KFC has their version of rice bowls (or dog food) and I have mine.  I used a Thai spicy marmalade dipping sauce as my inspiration.  This dish is quick easy and delish.  Start by cooking up at least 2 servings of arborio rice (this is the hardest part of the whole dish).  When cooking arborio rice (risotto rice) don't set it and leave it, rather watch it closely and add the hot water gradually according to package instructions.  While cooking rice, mix up the sauce; 6oz orange marmalade, one juiced lime, and 1/4 Asian chili sauce.  Steam 2 cups of broccoli florets.  In a large pan (wok) with a little canola oil saute 1 bag of thawed deveined and peeled uncooked shrimp.  Be sure to season the shrimp with coarse sea salt and black pepper.  When pink (about 5 min) add 3 sliced green onion and broccoli; cook until heated.  Remove shrimp from heat and toss with sauce.  Serve over rice.
