Spicy Orange Shrimp over Arborio Rice
KFC has their version of rice bowls (or dog food) and I have mine. I used a Thai spicy marmalade dipping sauce as my inspiration. This dish is quick easy and delish. Start by cooking up at least 2 servings of arborio rice (this is the hardest part of the whole dish). When cooking arborio rice (risotto rice) don't set it and leave it, rather watch it closely and add the hot water gradually according to package instructions. While cooking rice, mix up the sauce; 6oz orange marmalade, one juiced lime, and 1/4 Asian chili sauce. Steam 2 cups of broccoli florets. In a large pan (wok) with a little canola oil saute 1 bag of thawed deveined and peeled uncooked shrimp. Be sure to season the shrimp with coarse sea salt and black pepper. When pink (about 5 min) add 3 sliced green onion and broccoli; cook until heated. Remove shrimp from heat and toss with sauce. Serve over rice.

French Toast & Waffles Met and Had a Baby
Maple Cream Cheese Stuffed French Toast Waffles
French toast and waffles are go-to breakfast foods, so why not combine them into one. I used my waffle of insane greatness buttermilk waffle recipe and added a tsp of cinnamon to turn it into more of a french toast batter. For the filling, I beat 8oz cream cheese with 1/2 cup softened butter. Then I gradually added 3 cups of powdered sugar until combine. Finally, I added 3 tbsp pure maple syrup and 1 tsp vanilla. Cook waffles until done, remove from iron and spread half with the filling. Fold the waffles in half and serve with additional maple syrup, if desired. The butter, cinnamon and cream cheese melt under the hot waffle to create ooey gooey goodness!

Big Juicy Balls...Even Men Will Like Them
Stuffed Hot Sausage Meatballs
Arguably the best hot and spicy balls I've ever tasted. These meatballs have a surprising gooey filling that explodes in your mouth. The flavor of the smoked mozzarella is irreplaceable and adds such great depth. When reading through the recipe, I was surprised to find that these balls are huge! It only takes two to fill you up. Serve over you favorite bread as an open-faced sandwich or on a hoagie roll (but it better be a big hoagie).

The "Triple P"
Pork & Pear Panini
I love paninis even though I don't have a press. Improvise by using a grilling pan (for the marks) and press with a spatula. I've had an apple and cheese panini that was great so I decided to try this one. Anyway, who doesn't love a good pork? Slice up one bosc pear and saute with a little butter and nutmeg until soft. On a slice of your favorite bread slather a little onion fig jam and top with several slices of deli pork. On the other slice of bread add shredded gruyere cheese (with a light nutty flavor) and the sliced pear. Put sandwich together and grill on a panini press; or my ghetto version. Try substituting other fruits, flavors, etc.

Potato, Potahto, Frittata, Frittato...
Rosemary Potato Frittata & Breakfast Crostini
I served this for a nice hearty dinner. The frittata was great, to make it a little lighter I used skim milk instead of cream or half-and-half. I also didn't have baby potatoes, so I thinly sliced and halved regular baking potatoes which worked fine. Great for a left-over lunch! I love the crostini but I wouldn't necessarily serve it for breakfast. I think it would be even better served on much smaller crostini toasts without the pancetta, to make it more of a caprese feel. If you want to add a touch of elegance, a drizzle of truffle oil is perfect.

- My love for cooking started when I could barely reach the countertops. My mom would get out all of the baking supplies and let me create. Needless to say, my cooking techniques have become a bit more sophisticated. I believe that I can recreate anything I see in a restaraunt or cookbook. For this reason, my husband has said that I have "ruined eating out for him". I also believe that anyone can cook a delicious meal at home, gourmet kitchen or not. I'm a working woman but I find that after a long day at work, my kitchen is my sanctuary and I'm never too tired to cook up something new. I get bored very easily so trying new things is always a must! I think that cooking has become such an important part of my life because I love making others happy and I'm able to do that through my food. Thank you to all of my family and friends for all of your love and support, especially my husband Shawn, you are the reasons why I cook!
