A Lovely Cheese Pizza Just for Me!

Margherita Pizza

Doesn't every kid love a good cheese pizza, even little Kevin from Home Alone (the original).  I'm all grown up now but I love pizza!  This has to be my favorite pizza, simple but delicious.  A margarita, typically known as a great Mexican drink.  This Margherita refers to the queen of Savoy assembling a pizza that resembles the colors of Italy; red (tomato), white (mozzarella), and green (basil).  When making this pizza, be sure to use fresh mozzarella, not the shredded stuff, it really makes a huge difference.  Also, fresh basil is an absolute must, without it, why bother? 

Recipe (Quick & Easy)  2 tbsp cornmeal
                                         1 lb pizza dough
                                         1 cup tomato sauce
                                         1 1/2 cups sliced fresh mozzarella
                                         5 fresh basil leaves, torn
Preheat oven to 500.  Sprinkle cornmeal over pizza pan.  Roll out dough on lightly floured surface and transfer to prepared pan.  Spread tomato sauce over dough and top with mozzarella.  Bake 15 minutes or until crust is golden and crisp.  Sprinkle basil over pizza and serve.


Fancy but Quick Salad

Lobster Salad w/ Lemon Vinaigrette

I made this up one night when looking for a low calorie but protein filled side salad.  I love lobster and crab meat, even the imitation stuff because I don't usually have the time to steam a lobster and pull out all the meat.  I made up a salad with a mix of spinach and romaine lettuce.  I topped it with lobster meat and some flavored feta cheese.  Then, inspired by one of my favorite restaurants (Pastabilities) I made up a lemon vinaigrette.  It's actually surprisingly easy to make up your own dressings.  This one had the juice of one freshly squeezed lemon, 2 tbsps olive oil, white vinegar, salt and pepper to taste.  Light and delicious!

My love for cooking started when I could barely reach the countertops. My mom would get out all of the baking supplies and let me create. I'm a working woman but I find that after a long day at work, my kitchen is my sanctuary and I'm never too tired to cook up something new. I think that cooking has become such an important part of my life because I love making others happy and I'm able to do that through my food.
